We had the chance to sit down with Dan, who opened up about the roots of his cooking, the influence of his family, and the path that led to creating one of Fremont Street’s most iconic dining destinations. What started as a deeply personal vision is now a cornerstone of the community—where every dish carries a piece of his story. 

The Roots and Rise of Le Thai

Dan had a lot of influence from his mother and father, who owned a Thai restaurant back in Thailand. He grew up in the suburbs of Milwaukee, and was surrounded by Midwestern traditions, but it was the flavors of his mother and grandmother's Thai cooking that truly stuck with him. After moving to Las Vegas, and working in the restaurant industry for years, he brought those family recipes to life with Le Thai in 2011. His experience came from the kitchen watching his grandma- watching, learning, and experimenting any dishes he can get his hands on.

He combined street style Thai favorite with a modern twist, ultimately turning a small downtown space into one of the city's most talked-about restaurants. Among the favorites is their famous 3 Color Curry—a beautifully balanced dish that has become a crowd-pleaser for locals and visitors alike. His drive to perfect every dish, connect with guests, and raise the standard of Thai food locally helped make Le Thai a cornerstone of the Fremont East dining scene.

Behind the Scenes: CO₂ Safety at Le Thai

In a busy kitchen, there’s always something sizzling—but not every threat is visible. When Dan first opened Le Thai, he didn’t realize a CO2 monitor was even required for restaurants and bars. It wasn’t until a fire marshal brought it up that he began to dig deeper. What he learned next changed the way he thought about safety in his space.
